Regional Dietary Consultant



Provides consultation and assistance to assigned facilities to ensure quality, cost-effective Food and Nutrition services are consistent with company policy and federal, state and local regulations.

Consultation Function:

Provides assistance to facilities on a consistent and timely basis. Assesses the dietary operations to evaluate the provision of quality, cost-effective food and nutrition services in compliance with established standards, regulations and procedures. Reviews findings with Administrator, providing a written report. Completes a monthly report. Uses company reporting documents and criteria for all consultative services and preparation for surveys by regulatory agencies.

Monitoring Function:

  • Monitors dietary services to assure performance is consistent with company standards, facility policy and applicable federal, state and local rules and regulations.
  • Documents approval for all menus, therapeutic modifications and substitutions used in the facility based on the applicable diet manual.
  • Reviews nutritional documentation, and completes Nutrition Assessments/Reassessments, Dietary Progress; notes High Risk Documentation. 
  • Evaluates food handling, sanitation, preparation and service procedures, equipment and department layout related to work flow and cost.
  • Assists Dietary Services Manager in properly utilizing purchasing programs to achieve cost containment.
  • Monitors all available cost indicators and recommends corrective actions as needed to Administrator.
  • Evaluates participations in purchasing program (food purchasing, small wares, etc.).
  • Assists in the development of the Plan of Correction following state and federal surveys.
  • Participates in, or conducts special product testing, data collection, etc., as requested by management.

Quality Assurance Function:

  • Completes QA reviews in facility.
  • Assists facility staff in completing Plan of Action.
  • Responsible for knowing regulations interpretive guidelines in detail.

Training Function:

  • Assists in the orientation and training of Dietary Services Manager.
  • Develops and presents in-service programs for dietary associates.

Job Requirements

  • Must have a Bachelor’s degree in Foods and Nutrition (Dietetics).
  • Must have registration and membership in the American Dietetic Association.
  • Must have ability to obtain a state license, if required, as well as the appropriate continuing education to meet the requirements for registration set forth by the American Dietetic Association.
  • At least two (2) years experience as a professional dietitian or experience as a registered consulting dietitian to one or more long-term care facilities preferred.
  • Must maintain active membership in the American Dietetic Association, state and district Dietetic Associations and membership in Consultant Dietitian in Health Care Facilities (CDHCF)
  • Must have excellent written and oral communications, management and organizational skills.
  • Must have ability to read, write and follow oral and written directions at a level necessary to accomplish the job.
  • Must be able to relate positively and favorably to residents and families and to work cooperatively with other associates.
  • Must be capable of maintaining regular attendance.
  • Must be capable of performing the Essential Job Functions of this job, with or without reasonable accommodation.
